Way back when all of the kids were at home, money was scarce and so to fill up I used to make loads of cakes.
They all remember this fondly as I was always trying new recipes and there was nothing so comforting that to come into the kitchen and see batches of cakes waiting to be devoured.
One of the favourites was bread pudding.
Of course now this would be considered lethal with all the keeping fit and eating healthy diets that abound at the moment.
Take one large loaf, soak in water for a couple of hours, squeeze out excess water and put in large bowl.
Throw in sugar to taste (lots)
One packet of suet (omg, that's terrible)
couple of dollops of margarine.
as much dried fruit as you like (lots)
2 or 3 teaspoons of mixed spice
While you are doing this have a large roasting tin in the oven with a good dollop of lard or dripping melting to perfection.
Plop in mixture, smooth top and cook at no 5 for about 1 hour until the sides and top are all lovely and crispy and the fat is bubbling out around the edges of the pud.
Take out of oven and sprinkle yet more sugar on top.
There you have it.
One gut busting, cholesterol making, heart attack material pud.
Best eaten straight out of the oven.
I can tell you it was absolutely delicious.
